Banana Muffins (makes 12 muffins)
250g self raising flour 75g fine oat bran 150g brown unrefined caster sugar 3 medium bananas 2 medium eggs 150ml milk 50 ml oil 1. Preheat oven to 200˚C, 400˚F, gas mark 6. 2. Put paper cases into muffin tin. 3. Put sifted flour into a large mixing bowl, add sugar and oat bran. 4. In a second bowl, mash bananas then add milk, oil and eggs. 5. Pour the banana mixture to the flour and stir with a wooden spoon. Do not over beat, the mixture should remain lumpy. 6. Spoon into muffin cases and bake for 15 – 20 minutes, until golden brown. 7. Once muffins have cooled for a few minutes, transfer to a cooling rack. |
