Savour the flavour with a really quick and easy dish, with oodles of taste and plenty of colour...
Serves 4, Preparation time: 30 mins, Cooking time: 10 mins- 225g beef (cut into strips) (rump or sirloin)
- 2 peppers (red & yellow) (sliced)
- 2 carrots (sliced)
- bunch spring onions (sliced)
- 3tbsp groundnut/sesame oil
- (1 tbsp of oil for stir fry & 2 tbsp for noodles)
- 1 tbsp of grated root ginger
- 1 clove of garlic (finely chopped)
- 1 tbsp soy sauce
- 2 tbsp dry sherry
- 1 tbsp corn flour
- 3 tbsp oyster sauce
- 150g noodles
- Marinade the strips of beef in a bowl; first coat with corn flour, then grated ginger, chopped garlic, soy sauce & oil for 15 minutes.
- Prepare vegetables; slice peppers, carrots & spring onions.
- Cook noodles, follow packet instructions. Drain and run under cold water; add remaining oil to the noodles and toss, this will prevent them from sticking.
- Heat the oil in a wok until very hot; add beef until sealed and browned (approx 4 mins). Drain off in a colander.
- Heat wok again to fry peppers & carrots for a couple of minutes, remove from wok.
- Return wok to heat, add oyster sauce; once simmering, add the beef & noodles mix, then add vegetables and toss. When piping hot it’s ready to serve.
Tip: Veggies like cauliflower, courgettes, French beans, mange tout, cherry tomatoes, green cabbage all make fabulous additions to a stir fry!
