![]() Warm cabbage, onion + apple slaw PREPARATION TIME: 5 MINUTES COOKING TIME: 5 MINUTES SERVES: 2 INGREDIENTS 1 red onion, sliced very thinly (or white onion if not available) 1 medium green or savoy cabbage, shredded finely 2 large apples, peeled, cored and sliced thinly olive oil salt and pepper balsamic vinegar INSTRUCTIONS 1. Heat the oil in a large pan and sauté onions for a few minutes. 2. Just before they start to brown add the apples, cook for a minute then add the cabbage, a dash of vinegar, seasoning and a little water. 3. Stir over a hot flame until everything is combined well and the cabbage is barely cooked. Cauliflower and broccoli pilaf with chicken PREPARATION TIME: 5 MINUTES COOKING TIME: 15 MINUTES SERVES: 4 INGREDIENTS 1 tbsp oil for frying 4 chicken breasts, preferably with skin on 1 tbsp curry powder 200g basmati rice 500ml chicken stock 250g cauliflower 250g broccoli 1 lemon, cut into small wedges small bunch chopped fresh coriander INSTRUCTIONS 1. Heat the oil in a frying pan that has a lid or flameproof casserole. 2. Add the chicken, skin-side down and fry until the skin is browned. 3. Add the curry powder and rice, fry for 1 minute, then stir in the stock. 4. Add the lemon wedges to the pan and turn the chicken skin-side up. 5. Bring to the boil, then simmer with the lid on for approximately 10 minutes, then add the cauliflower and broccoli and cook for another 5 minutes or so until the chicken is cooked through and the rice has absorbed all the stock and is tender (you may need to add a little more stock if the rice looks like drying out too much). 6.
