Chicken Kebabs & Fruity Cous Cous Print E-mail

A tasty and quick recipe for chicken kebabs that your nippers will love.

What you need:

4 chicken breasts

24 mushrooms

24 cherry tomatoes

3 peppers (1 orange, 1 green & 1 yellow)

2 red onions

8 kebab skewers

Marinade

8 tablespoons of olive oil

A handful of coriander

2 cloves of garlic

Juice of ½ a lemon

Cous Cous

8oz Cous Cous

1 apple (grated)

2 carrots (grated)

4oz sultanas

Zest of 1 orange

Juice of ½ a lemon

A knob of butter

Salt and pepper

Preparation time 45 minutes 

Cooking time 15 –18 minutes

  1. Cut chicken breasts into approximately 1 inch chunks.
  2. Prepare marinade, peel and finely chop garlic put into a bowl, wash and finely chop coriander, add to garlic, then add olive oil and lemon juice. Add chicken pieces and mix together. Leave to marinate in fridge for 20 minutes.
  3. Wash mushrooms, peppers and tomatoes, then cut peppers into 1 inch pieces, leave mushrooms and tomatoes whole. Peel and cut onions into 1 inch pieces.
  4. Preheat the grill.
  5. Begin to skewer the chicken and vegetables, start with chicken, mushroom, onion, pepper, tomatoes, then repeat, finish with a piece of chicken to hold the others in place. Drizzle a little olive oil over vegetables.
  6. Place the kebabs under the grill, turn often, for about 15 –18 minutes. Check chicken is piping hot before serving.
  7. Melt butter in a saucepan, add orange zest, sultanas, grated apple, grated carrots and lemon juice. Add to cous cous once cooked (follow cooking instructions on packet), season to taste.
  8. Serve the kebabs on top of fruity cous cous. Enjoy!
